Because you have a very high io time on average. My question:
Do you also have the problem that your server is simply restarted after more than 9 days? Because I currently have the problem with an RS 8000 with a 3 TB disk with Debian 11 (bullseye) and Rocky Linux 8.x.
The I/O time is high because the server is capping the write speed and hence delaying the writes.
And no, I have not had the server up 9 days yet. I sincerely hope it will not reboot, that's definitely not by design.
