SOLVED. Flushed all nftables and now all is back to normal.

I'm using csf but with csf disables I have the same results. No other firewall.
Host is not busy at all.
Can't figure what is wrong with my server... damn..

PS: Booted in rescue mode, I get around 7-800 Mb/s (so in rescue is good)
I think is something wrong with my config... I'm using virtio as network.
