You should first read for what lets-encrypt and certbot is before start to work with it.
And also you said you done the Tutorial for CentOS, so u installed NGNIX and now in Certbot you say you use Apache...
Please better go with a managed Server or just get an Ready to Use Gamesever.
You dont need a Website to use Lets Encrypt. But you need to have a Domain that directs to your NGNIX Server. Lets Encrypt doesnt have to Option to certificate a IP Adress.
If you want to have an ssl certificate for your IP, you have to Buy a IP Certificate. Also see:

Latest release version of OpenGamePanel seems to be 4 years old.
You must not run such old software on a server connected to the internet. It's just a no go.
And beyond that: what are your plans for general server security? But I probably won't get an answer to this one anyway...

Secure your server by using a firewall to let you use the SSH port ONLY with your IP address.
If your IP address changes you can go and use the CCP admin to log in with the console.
This way you have almost no work. Completely new system. Self managed and updated applications.
And you run your minecraft server + teamspeak.

I don't know which game server so other panels are HomelabOS, Yunohost and Dockstarter.
Also repeating what the community wants to tell you: if you dont want to properly update and monitor your server, you should not be root and use a ready to go gaming server hosting offering.
To use commands that you do not understand with old unsupported software is asking for trouble and somehow is also not cool. You want to get this done and learn something.. than it is better to start your project with community driven projects that produce superman software and not with crappy leftovers.

On a serious note in that case better start with Dockstarter and use this docker image for counter strike:

It could make sense to first use the cloudron image because it allegedly takes care to update the server and domain routing. But someone who uses cloudron may be able to give more input on that.
